Bunny Chow

This spring version of puppy chow is so great! Not only is it EASY to make, it’s also fun to put together!! You can get creative with choosing your candy and who doesn’t love spring inspired sprinkles? The result is a bright and colorful addition to the table. Your guests are sure to love it. Enjoy!!

This recipe takes 15 minutes to complete and makes 6 cups of Bunny Chow, which should be plenty for 10-15 people.

Pro Tips:
1. Mix up the spring inspired candies in this recipe! I’d stick with the non-gummy options. For example, go for M&Ms, Reese’s Pieces, Robin Eggs…etc. I listed out the specific ones I used but go buy whichever candies you like!!
2. I highly recommend buying the white chocolate in bar form! It tends to be higher quality, resulting in smoother melting and a better flavor.

Ingredients:
4 cups Rice Chex
8 ounces white chocolate (1 1/3 cup chopped or chips)
1 teaspoon vegetable shortening
1 ½ cups powdered sugar
Pinch of salt

½ cup pretzels (twists, rods, chips – any of those)
½ cup butterscotch chips
¾ cup spring candy (I used equal parts Mini Robin Eggs, Reese’s Pieces and Flavored Mini Marshmallows)
Spring inspired sprinkles

Directions:
1. Roughly break apart the white chocolate (if it’s not already in chip form) and place it in a microwave safe bowl. Add the vegetable shortening to that and heat on high for 30 seconds. Give it a good stir and repeat until the chocolate is smooth and melted, it should only take about a minute and a half total.
2. Pour the Rice Chex into a gallon size baggie and pour the melted chocolate on top of them. *It helps to fold back the top of the baggie, see pictures. Seal the baggie and give it a really good shake to coat the Chex. Open the bag and let cool for a minute.
3. Add the powdered sugar to the Chex, reseal the baggie and give it a good shake again.
4. Pour the Chex onto a cooling rack with a paper towel placed underneath it. Let cool for 5 minutes.
5. Pour the finished Rice Chex, pretzels, butterscotch chips and candy into a large bowl and gently stir to evenly distribute everything.
6. Pour it all into your serving bowl and top with spring inspired sprinkles.
7. Enjoy! Tightly wrap this Bunny Chow in plastic wrap to keep it fresh or store it in an airtight container until you are ready to serve. It’ll keep for a few days before it starts to become stale.
