Peppermint Reindeer Chow (Puppy Chow)

Certain treats are very problematic to have around my household and this is one of them. Peppermint Reindeer Chow is seriously addicting!! Peppermint, candy canes, white chocolate, dark chocolate and Chex; isn’t that the merriest bunch of ingredients you’ve ever seen? Seriously, serve this anywhere and it’ll be a crowd pleaser. I hope you enjoy it as much as I do!

This recipe makes 4 cups, about 8-10 servings. It will take 10-15 minutes to make.


Ingredients:
3 cups Rice Chex
¼ cup crushed candy canes, more for garnish
½ tablespoon coarse sea salt (optional)
6 ounces or 1 cup white chocolate chips
¾ teaspoon vegetable shortening
1 ½ teaspoons peppermint extract
1 cup icing sugar
½ cup dark chocolate chips

Directions:
1. Crush the candy canes by placing whole ones in a baggie. Take a hammer(or hammer-like object) and crush them until they are a mix of very small pieces and powder (see the 2nd picture above).
2. Pour the Rice Chex, crushed candy canes and sea salt into a gallon-sized baggie, set aside.
Note: the sea salt is optional, if you don’t like a sweet & salty pairing leave it out!
3. Place the white chocolate and shortening into a microwave-safe bowl and microwave on high in 20 second increments, giving it a stir each time. It should take a minute to get a smooth melted texture. The moment it’s smooth, stop microwaving so that it doesn’t burn!
4. Stir the peppermint extract into the melted white chocolate and pour it all into the baggie with the Chex. Seal it and gently roll it around/shake it until the white chocolate has evenly coated the Chex. Next, add the icing sugar and give it a good shake until the sugar is well-distributed.
*Don’t worry about some of the ingredients sticking to the bag, there’s plenty to go around!
5. Pour the Chex into a colander and shake off some of the excess icing sugar, then pour it into your serving bowl or storage container.
6. Add the dark chocolate chips on top and use a spoon to carefully disperse them down into the Chex (see video below). The chips tend to fall to the bottom, so stir them in a bit and as people snack on them, they’ll naturally continue to fall.
7. Garnish with extra crushed candy canes.
8. These are ready to serve immediately or can be stored in an airtight container at room temperature. They’ll stay fresh for about 2 days and will be edible but verge toward tasting stale after that.
